Sweet Potato Pudding
INGREDIENTS:
 2 pounds sweet potato
 1 1/2 cups brown sugar
 1 cup flour
 2 cups coconut milk
 1 1/2 cups dried fruits
 2 teaspoons vanilla
 1 1/2 teaspoon grated nutmeg
 1 teaspoon mixed spice
 2 tablespoons sugar
 1 teaspoon salt
 1 teaspoon margarine
METHOD:
Wash and pare off the skin of the potatoes
Wash again then grate
Grate coconut, add water and squeeze juice through a strainer
Blend flour, mixed spice (raisins etc) ,salt, and nutmeg.
Combine this mixture with the grated potatos and mix well
Add sugar, fruits and coconut milk. Mix well.
Grease pan, pour in batter, bake at 350 degrees F for 40-60 minutes or until done

Jerk chicken Recipe
4 cloves of Garlic
1 large onion
6 green onions chopped
2 scotch bonnet peppers (if u like it hot)
seeded and minced
zest of half a lime
1/4 cup soy sauce
1/2 cup red wine vinigar
1/4 cup veg oil
1 tbls brown suger
2 tbls fresh thyme
1/2 teaspoon of fresh cloves
1/2 teaspoon of ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1 tbls black pepper
2 pounds of chicken
Method:
place all ingrediants except chicken in a blender and process untill pureed...place chicken in a plastic bag...or shallow pan and pour marinade over chicken.....leave over night in fridge .....
grill or broil chicken over medium heat untill cooked through......
boneless chicken takes less cooking time .....and if you want hot hot .......leave the seeds in country pepper (scotch bonnet)
